Cuvée R.D. 2007 from the House of Bollinger is a bold and dazzling cuvée. Conceived by the illustrious Madame Bollinger, Cuvée R.D. is an Extra Brut champagne, vintage and aged on the lees, offered for tasting just after disgorgement: R.D. for "Récemment Dégorgée". Its recent disgorgement guarantees optimal freshness of the wine, that extraordinary moment when the intensity of the freshness equals the beauty of the aromatic expression.

This exceptional cuvée is only produced in great years and reveals the exceptional aromatic expression of its vintage in a Champagne that has taken the time to develop while preserving its brilliance.

This 2007 vintage is a blend of 70% of Pinot Noir and 30% of Chardonnay from 14 different crus, of which 91% are Grands Crus and 9% are Premiers Crus. This blend is vinified and then aged in barrel. The bottles are taken down to the cellar, under cork to optimise the development of the aromas, and are aged for more than 10 years.

This champagne has an intense amber colour.

The nose is complex and particularly marked by aromas of honey and brioche. Then the bouquet opens up with notes of spices with multiple nuances such as ginger, cumin or caraway, superbly integrated with touches of mirabelle plum, dried apricot and fresh hazelnut.

On the palate, the attack is lively and energetic with notes of white plum, walnut and aniseed. The beautiful freshness of this wine is matched by an incredible tension in the mouth.

This magnificent R.D. 2007 vintage from Bollinger will enhance saffron-based dishes such as langoustine with saffron vinaigrette or poultry in saffron and ginger sauce.
